Brewing Specs: For pourovers, we found that a ratio of 1:13.6 makes a balanced cup that emphasize this cup's epic sweetness. For espresso, we stretch it out to a 1:2 ratio to add some bright, effervescent acidity to the sweetness.

More: Coffee runs in Claudia Fabiola Yela's blood. She grew up on her family's traditional Colombian coffee growing farm, and even at a young age she knew she wanted to be a farmer for the rest of her life. Following in her parent's footsteps, she and her husband started their own family business around coffee, and for over 20 years they grew coffee for the commercial market. They sold all their coffee to big cooperatives, never receiving anything other than market price for their coffees. Market price for commodity coffees is unbelievably low; at the time of this writing, coffee is trading at $0.95. Understandably, Claudia and her husband began to lose the motivation to continue producing coffee because it just wasn't profitable.

In 2018, a family friend mentioned Caravela, an importer working in specialty markets. Claudia selected a lot from her farm produced with a lot of care and attention, and took it to the warehouse in Pitalito. To her surprise, the coffee received a price far above the commodity market price.
